Food Inspiration: Scrumptious Soups


From Winter to Spring and Summer to Autumn, soup is a healthy delicious meal that can be enjoyed for lunch or dinner any day of the week! With our 2012 mission to Go Green, these scrumptious soups are just perfect and will not only delight your appetite they will nourish your body with goodness from mother nature! 

 ♥  Creamy Soups  ♥

Creamy Spinach Soup 
Put 1 chopped onion, 2 peeled garlic cloves, 3 cups water and salt and pepper in a pot over high heat. Boil, cover, lower the heat and simmer until the onion is tender, about 10 minutes. Add 10 ounces chopped spinach and 1/2 cup parsley leaves; cook until the spinach is tender, 2 to 3 minutes. Add 1 cup Greek-style yogurt and purée. Garnish: A spoonful of Greek-style yogurt and chopped parsley.

Squash and Ginger Soup 
Substitute 1 tablespoon minced ginger for the garlic and 4 cups chopped butternut squash for the spinach (it will take longer to soften). Skip the parsley and substitute half-and-half or cream for the yogurt. Garnish: A spoonful of cream.

Curried Cauliflower Soup
Substitute 1 tablespoon minced ginger for the garlic, 2 cups cauliflower florets for the spinach (they will take longer to soften), 1 tablespoon curry powder for the parsley and coconut milk for the yogurt. Garnish: Chopped cilantro.

♥ Brothy Soups  ♥ 

Vegetable Broth With Toast 
Put 2 chopped carrots, 2 chopped onions, 1 small chopped potato, 2 chopped celery ribs, 2 garlic cloves, 10 sliced mushrooms, 1 cup chopped tomatoes (canned are fine), 10 parsley sprigs, 1/2 ounce dried porcini, 8 cups water and salt and pepper in a pot over high heat. Boil, lower heat and simmer until the vegetables are soft, 30 minutes or longer. Strain and serve over toasted good bread. Garnish: Chopped celery leaves.



Egg Drop Soup

Beat 4 eggs. Boil the strained stock, lower the heat so it simmers and add the eggs in a steady stream, stirring constantly until they’re cooked, 1 to 2 minutes. Stir in 1/4 cup chopped scallions, 1 tablespoon soy sauce and 1 tablespoon sesame oil. Skip the bread. Garnish: Chopped scallions.

Rice and Pea Soup
Boil the strained stock, lower the heat so it simmers and add 3/4 cup white rice. Cook until tender, then add 2 cups fresh or frozen peas; cook for a minute or two. Skip the bread. Garnish: Grated Parmesan.


 ♥  Earthy Soups  

Bean Soup
Put 1 1/2 cup dried beans, 1 chopped onion, 2 chopped carrots, 2 chopped celery ribs, 2 bay leaves, 1 tablespoon fresh thyme leaves and 6 cups water in a pot over high heat. Boil, lower the heat, cover and simmer until the beans are soft, at least 1 hour, adding more water if necessary. Season with salt and pepper. Garnish: A drizzle of olive oil.

Chickpea and Pasta Soup 
Substitute chickpeas for the beans and rosemary for the thyme and add 1 cup chopped tomatoes (canned are fine). When the chickpeas are almost tender, add 1/2 cup small pasta. Cook until the pasta and chickpeas are tender, 10 to 15 minutes. Garnish: A few chopped rosemary leaves.

Spicy Black Bean Soup 
Use black beans and substitute fresh oregano for the thyme. When the beans are done, add 1 tablespoon chili powder, 1 dried or canned chipotle and the juice of a lime. Garnish: Cilantro and sour cream.

♥  Hearty Soups  

Minestrone 
Sauté 1 chopped onion, 1 chopped carrot, 1 chopped celery rib and 1 teaspoon minced garlic in 3 tablespoons olive oil for 5 minutes. Add 2 cups cubed potatoes and salt and pepper; cook for 2 minutes. Add 1 cup chopped tomatoes (canned are fine) and 5 cups water. Boil, lower the heat and simmer for 15 minutes. Add 1 cup chopped green beans; simmer for 20 minutes. Garnish: Chopped parsley and grated Parmesan.

Mushroom Soup 
Substitute 1 1/2 pounds sliced mushrooms (preferably an assortment) for the potatoes; sauté until they brown, 10 to 12 minutes. Substitute ½ cup white wine for the tomatoes, skip the green beans and add a fresh thyme sprig with the water. Garnish: A few thyme leaves.

Tomato and Garlic Soup
Use 2 tablespoons minced garlic and substitute 2 tablespoons tomato paste for the celery. Skip the potatoes and green beans; use 3 cups tomatoes and 3 cups water. Cook the tomatoes for 10 to 15 minutes. Garnish: Lots of chopped or torn basil.

Please Note:
All of these recipes serve four, and you’ll want to use a medium or large pot. Most can be cooked for a while — but not so long that the freshness is gone. Most will taste as good or better the next day, so consider making a double batch and refrigerating (or freezing) the leftovers. But never boil a soup after you’ve added dairy to it; instead, reheat gently.
If you want a supersmooth soup (and just about any of these soups can be puréed if you like), use a standing blender — let the soup cool a bit first — which creates a finer purée than an immersion blender does; you might even strain the soup after puréeing it.
Garnishes are all optional, though herbs add a dimension that will be lacking otherwise. If you taste as you’re cooking, you’ll be fine, because there is really nothing to go wrong here.

Glamour Gal and Playboy Australia model Sheridyn Fisher is the new Aussie Vegetarian Ambassador for PETA. Sheridyn was in Sydney today filming her brand new "Go Vegetarian" ad to promote PETA (People for the Ethical Treatment of Animals). Sheridyn embraces a healthy Vegan lifestyle and is an active animal-rights activist with campaigns for WWF, RSPCA and TigerTime.

For our super festive Holiday issue our featured Glamour Gal is Renee Somerfield, an amazing Aussie model, animal-rights activist and vegan. This beautiful brunette is a positive role model for young woman, inspiring them live with kindness and compassion. Through her love for animals and active involvement in animal-rights campaigns and projects like the "Save Bobby" campaign through AnimalsAustralia.org. Renee's beauty is much more than skin deep. 

Eco Glamazine scored an exclusive interview with Renee to find out how this Sydney starlet lives everyday with kindness and compassion. 

Renee thank you for being our featured Glamour Gal for December 2011. When it comes to beauty and glamour what makes you feel beautiful? 
Renee: "What makes me feel beautiful is being kind to my body, my mind and my spirit. Nourishing my body with the food it needs, living my life with passion, love and happiness. Feeling beautiful on the inside will reflect on the outside."

Renee Somerfield describes to herself as a peace believer, a health & wellbeing enthusiast and an Aussie beach bum...  She is funny, outgoing, loving, passionate and down-to-earth. Renee is an animal lover and inspires others to be kind to all animals. She explains to Eco Glamazine about her love for her gorgeous bunny rabbits. 

We adore your passion for the planet and kindness towards all creatures great and small. What are your favourite animals? 
Renee: "I love and respect all creatures, I think they are all so beautiful and smart in their own way! At the moment I have rabbits and dogs but my dream would be to own my own a huge farm near the ocean. I would have cows, pigs, horses, lamb, dogs and bunnies - all adopted or rescued from abattoirs, factory farms or fur factories. I think there is nothing more beautiful than seeing an animal in serenity and peace and I would love to give that to them."

  

Renee we enjoy following you on Twitter especially your adorable bunny photos. Can you tell us more about your sweet furry friends? 

Renee: "My bunny rabbits are honestly the cutest, sweetest, most beautiful souls! They really are just wonderful pets! I have five of them and they all mean so much to me. They each have different and unique personalities, but they are all very smart and very loving! They each know their own names and know that certain words mean something. I always look forward to coming home and being showered with lots of kisses and cuddles from them.. People are so shocked and surprised at how sweet they are!"

Unfortunately many of these gorgeous bunnies spend their lives in laboratories... Eco Glamazine knows how important it is to always choose cruelty-free beauty products. What are some of your favourite "kind" beauty-must-haves? 

Renee: "Animal testing is a very big deal to me! Cosmetic companies test on a variety of species including rabbits, rats, pigs, dogs and primates. These poor innocent souls go through a lifetime of suffering, some lasting for months or even years and are always killed at the end of the procedure. The tests include oral, dermal and inhalation exposure which result in infections, burns, ulcers, wounds and severe pain. Buying cruelty-free and vegan products is something I am extremely conscious about. It is not hard to look at a label and look out for the cute bunny icon and the words "not tested on animals." If the label does not state these words, it is more than likely that the company has, is, or will test on animals! Some of my favourite beauty must haves are Youngblood and Claytime mineral makeup, Kora Organics skincare, Moroccan Oil and Nak Haircare and Sukin deodorants. Like humans, animals feel pleasure and pain, happiness and misery. Please buy cruelty-free and don't let an innocent creature suffer for your vanity, be beautiful without blood on your hands!"

Renee's kindness for animals goes beyond just embracing a cruelty-free beauty routine, she also lives a vegan lifestyle. We love reading Renee's daily Tweets about her trips to the organic food markets, her Aussie adventures and informational updates about how we can get involved saving animals. 

Being a Vegan and an active animal-rights activist we know that your Kind Life motto is something very dear to your heart. Renee can you share more about your healthy Vegan lifestyle? 
Renee:  "The "Kind Life" motto is extremely dear to my heart and vegan lifestyle is something I am very passionate about. I do not hold myself superior to any other living creature and believe that it is not my right, nor anyone else's to take an animals life for the sake of your appetite. Although I haven't always been vegetarian or vegan, I grew up being led to believe that eating meat was normal and okay. It wasn't until I was mature enough to realise exactly where my meat came from and I quickly turned vegetarian. When I discovered that their is actually just as much cruelty in a glass of milk or a boiled egg, it was only natural to be vegan. I am very disappointed and guilty of my past.. being naive, ignorant and uneducated, but I do take my experience and try to educate others as much as I can! I am the happiest, healthiest and most alive I have ever been in my life not consuming any animal products! I think the love and respect of all living creatures is the most noble attribute of a person."

Renee, do you have any advice for a readers who may want to start a vegetarian or vegan diet? 
Renee: "I made my decision to be vegan based on my love for animals. I think people need to ask themselves why they are wanting to make this positive change: whether it be for animals, the environment or for their health. I would then suggest they do as much research as they can on the issue - google, google, google! You will open your eyes to a whole other world that you never knew about, exposing the cruelty, health risks and environmental issues that comes from a diet of consuming meat and animal products. Most people would feel angered that they were unaware and make the change to a vegetarian or vegan diet a lot easier!"

Renee's healthy vegan diet includes fresh, natural organic food and she loves visiting her local organic markets on the weekends. This healthy eating helps Renee stay toned, sexy and in shape for her job as a professional model in Sydney. She has been featured in many Australian magazines such as Maxim Australia, Zoo Weekly, Ralph and Autobabes Magazine.

When someone mentions the word Apple it's likely these days that iPhone or Mac comes to mind, but the Apple we are featuring today is the kind that grows on trees! From Granny Smith to Pink Lady to Golden Delicious the humble apple truly is one of nature's super fruits. 


An Apple a Day Keeps The Doctor Away. Remember that old saying - well it's true! Apples are "Nature's Toothbrush" they help clean teeth and massage gums! They make the perfect healthy afternoon or mid morning snack. Apples are high in fibre which makes you feel full, assisting with weight loss! Eating an apple a day can also help you reduce cholesterol levels - that's music to our ears! Research also indicates Apples can reduce the risk of colon, prostate and lung cancer. Apples are made up of 75% water! Did you know - fresh apples even float when submerged in water, because 25% of their volume is air. 


Adam and Eve... and that Apple!
The word Apple comes from the Old English word "aeppel". In Greek mythology the apple is a symbol of love and beauty. The apple is known as the forbidden fruit in many religions including Christianity.  Remember Adam and Eve and the Garden of Eden? Christian tradition features a red apple known as the forbidden fruit that Eve steals from the Garden of Eden and later convinces Adam to eat it. The latin word for apple (mālum) and evil (mălum) are very similar which may have influenced the bible referring to the apple as the Forbidden Fruit


Apple Jack anyone?
There are over 10,000 different varieties of apples, with Red Delicious being one of the most popular. Apples grow on small trees which blossom in the Spring and bear fruit in Autumn/Fall. They are a member of the rose family of plants. You may already know that sliced apples turn brown when exposed to oxygen. But to prevent this, place the slices in a pan of cold water with a pinch of salt. For salads, dip them slices in fresh lemon juice to prevent slices from turning brown. 

Apples are also used to make juice, cider, martinis and Apple Jack. They have always been a very popular ingredient in desserts such as apple pies, crumbles, stewed apples, cake and even muffins. Coated in hot toffee that is allowed to cool creates a delicious candy treat known as the Toffee Apple. Yum! Popular variations include Candy Apples and Caramel Apples. 


As American As Apple Pie. America is the second leading producer of apples after China, so it's no wonder the Apple has become much more than just a fruit. Even New York city is known as The Big Apple. Plus we can't forget the world's most valuable brand, Apple Inc. It's also part of the American movie culture including many fables and fairy tales. A red apple is featured on the cover of the Twilight book representing the forbidden fruit. Author Stephenie Meyer says she loved the phrase "the fruit of the knowledge of good and evil"
In Disney's fairytale of Snow White, a wicked Queen tricks Snow White into taking a bite of a poisoned apple which sends her into a magical sleep. A deep sleep that only the power of love's first kiss can cure... 


It seems that Eve, that evil Queen and Steve Jobs aren't the only ones who know the power of the Apple. World Vegan Day: 10 Famous Vegans



World Vegan Day is celebrated annually by Vegans all around the world. World Vegan day started in 1944 by The Vegan Society and is now celebrated globally in many countries on various days in October & November. This year in Australia World Vegan Day celebrations were being held in Melbourne on Sunday, November 6th hosted by the Vegetarian Network Victoria. 

To celebrate World Vegan Day we are paying tribute to our Top 10 Famous Vegans & Vegetarians - our Vegan Vixens

1. Alicia Silverstone [vegan]
 
PETA crowned Alicia Silverstone their 2004 Sexiest Female Vegetarian and in 2007 Alicia appeared nude in a PETA print ad and commercial promoting vegetarianism for GoVeg.com. She has been a vegan since 1998, "Once I became Vegan, my nails were stronger, my skin was glowing, I lost alot of weight. Going Vegan is the single best thing I've done in my life. I am so much happier and more confident, I made a decision based on my moral beliefs."
Alicia's New York Times best selling book The Kind Diet is a simple guide for vegetarians/vegans featuring 100 delicious recipes. She also shares her vegan diet tips and eco-friendly lifestyle choices via her online community at TheKindLife.com.

2. Pamela Anderson [vegan]

When you think of a Celebrity Vegan it's very likely that Pamela Anderson comes to mind, due to her involvement in many animal-rights campaigns with PETA. Pamela is a Vegan and a devoted animals rights advocate. "Eating vegetarian helps me stay slim and healthy, and it gives me the energy to keep up with my kids, work and travel."   Pamela has also appeared in many Vegetarian campaigns for PETA. In 2010 she launched her Vegan Shake at Millions of Milkshakes made with a vegan ice cream, pineapple, coconut and banana. In 2001 Pamela exposed the truth about Kentucky Fried Chicken's horrible treatment of their chickens, starting a campaign to boycott Kentucky Fried Chicken calling it Kentucky Fried Cruelty.


3. Olivia Wilde [vegan]
 

Actress Olivia Wilde received PETA's Sexiest Female Vegetarian award in 2010. Olivia has said that since going Vegan, she feels more healthy and has recently launched a website to support her vegan lifestyle; Wilde Things.   
Olivia explains, "Beyond my desire to boycott torture factories, I am also way happier when I eat a plant based diet, and I feel about a thousand times more energetic." 

4. Carrie Underwood [vegan]
 

Carrie Underwood grew up on a farm in Oklahoma and she said she'd rather sing to the cows than eat them. "Ever since I was little I loved animals."  She stopped eating red meat when she was about 13 and after moving away from Oklahoma at age 21 she became a vegetarian. Due to her lactose intolerance she is now a Vegan. Carrie once wore a "V is for Vegetarian" t-shirt on American Idol and was name PETA's Sexiest Female Vegetarian in 2005. 

5. Kellie Pickler [vegetarian]

Kellie Pickler was once a red-meat-eating country girl, but after she saw a PETA ad online featuring vegetarian Pamela Anderson, she made the switch to Vegetarianism. Kellie said, "It's animal cruelty. A lot of it has to do with knowing what happens to the animals and it really bothered me and so I will not eat meat." 
PETA was impressed with Kellie's change in diet and named her their 2009 Sexiest Female Vegetarian. Kellie now shares her vegetarian diet & workout information on her official website


6. Shania Twain [vegetarian]


The queen of country music Shania Twain has been a Vegetarian since 1993 and was PETA's first star to be named Sexiest Vegetarian Alive. Shania explains, "I don't eat meat, fish or eggs. I was never a big meat-eater, but I've got more energy now. I eat a lot of tofu and drink soy shakes with fruit every morning. I always have soybeans, black beans or chickpeas for lunch or dinner." 





7. Lea Michele [vegan]

After reading the book "Skinny Bitch" actress Lea Michele went Vegan and now works closely with PETA as a spokeswoman for animal-rights. Lea explains the benefits of her new vegan diet, "I'm a Vegan. It makes me feel really good and bright." 

8. Ellen Degeneres [vegan]

Comedian, animal advocate and TV host Ellen Degeneres is a passionate Vegan. Her wife Portia De Rossi also follows a vegan lifestyle. Ellen shares her Going Vegan diet tips and delicious recipes on her website. She also contributes to many animal-rights organisations including The Gentle Barn and Farm Sanctuary. She also co-owns her own natural pet food company Halo. "Ever since I can remember I've loved animals."

9. Kristen Bell [vegetarian] 

Actress Kristen Bell is a vegetarian because of her love for animals and was voted PETA's Sexiest Female Vegetarian in 2006. "I have always been an animal lover. I had a hard time disassociating the animals I cuddled with - dogs and cats, for example - from the animals on my plate. I never really cared for the taste of meat. I always loved brussels sprouts."  Kristen is a very healthy eater and loves working out, she finds balance in her life by keeping it simple. "One of my on-the-go snacks is low fat cottage cheese with diced tomato and avocado mixed in."


10. Hayden Panettiere [vegetarian]

Candie's cutie Hayden Panettiere has always been passionate about saving animals and is actively  involved as an animal-rights activist with the Save the Whales campaign. Just like her fellow actresses Hayden loves animals and follows a vegetarian diet. "Anyone who knows me knows how much I love animals and how passionate I am about protecting them."  Hayden has two rescue dogs Penny Lane and Madison and one cat.
